The Start Gluten Free on a Budget

Creating a simple delicious Gluten Free meal on a budget can be a challenge. I can’t tell you how many times I’ve wished I could simply eat ramen. Well it turns out you can (not to mention it will be 10X’s more delicious) The idea behind ramen is to use what you’ve got. I always have produce in my fridge but if you don’t you can change up the ingredients.

Gluten Free Ramen with Steak (yields 4 servings)

Ingredients:
Brown Rice Noodles (this will vary depending if you like more noodles or broth)
2 Tbsp canola oil
1/4 cup Tamari (gluten free soy sauce)
2 Tbsp diced Leeks
1/2 cup of sliced mushrooms
1/4 cup diced baby corn (available in the international foods isle)
2 cloves of garlic
1 Tbsp cayenne pepper
1 8oz round steak cut into strips
1 tsp minced ginger
6 cups of water
Salt and Pepper to taste

In a large pot heat the 2 Tbsp of canola oil on medium high heat add in leeks, garlic and ginger. Cook until the leeks become soft. Add in the steak strips and brown them. Add in the soy sauce and mushrooms cook for 5 minutes. Add all the remaining ingredients and bring to a boil. Drop in your rice noodles last minute (they will cook up in about 3 to 5 minutes) Serve hot and enjoy!
